Chicken Tikka Kebab Skewers

Vegan Kebabs with avocado dip

Ingredients

  • 3 tbsp of olive oil
  • 2 garlic cloves crushed
  • 1 tsp of chilli flakes
  • 3 sprigs of rosemary (or 1 tbsp dried)
  • 4 portobello mushrooms quartered or 16 button mushrooms
  • 4 peaches, destoned into quarters
  • 2 courgettes cut into chunks
  • 2 red onions into large chunks
  • 1 avocado
  • 1 lemon, juiced
  • ½ tsp of mustard 

Method

Step 1. Mix your oil, garlic, chilli flakes and rosemary together. Then start piling your kebab ingredients onto their sticks, alternating between peaches, mushrooms, courgettes and onion  Step 2. Brush your assembled kebabs with your flavoured oil and some salt & pepper to taste. These can be made the day before if you’re prepping or be made right before cooking!  Step 3. Heat up your BBQ so it’s super-hot! Whilst you’re waiting for that to reach the right temperature then it’s time to make the avocado dip  Step 4. Mash up your avocado with the lemon juice – either leave your dip chunky or blitz in a food processor until smooth  Step 5. Now time to BBQ your skewers for 4-5 minutes each side until nicely charred. Then serve straight away with your avo dip!
