Jazz up your Fruit Salad with a dollop of Greek yoghurt and a few sprigs of fresh mint.

Ingredients (Serves 4):

  • 200g Mixed Berries
  • 200g Mango, sliced
  • 200g Peach, sliced
  • 200g Melon, sliced
  • 200g Apple, sliced
  • 200g Pineapple, sliced
  • Handful Fresh Mint Leaves, finely chopped
  • 100ml Greek Yoghurt
  • 2 tbsp Caster Sugar

Method:

  1. Mix all of the fruit together in a large bowl, removing any cores, pits or stems.
  2. Scatter the chopped mint and sugar over the fruit, mix well, then serve in smaller dishes with a spoonful of Greek Yoghurt.
