Makes 24, 15 minutes Preparation, 30 minutes Baking

Did you know a Bronkie is half chocolate chip cookie, half chocolate brownie? Try this deliciously chocolatey food hybrid, for a slice of baking heaven!

Ingredients:

For the Chocolate Chip Cookies:
  • 250g Plain Flour
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 170g Unsalted Butter
  • 200g Dark Brown Sugar
  • 100g Caster Sugar
  • ½ Vanilla Pod
  • 1 Large Egg
  • 300g Chocolate Chips

For the Chocolate Brownies:

  • 250g Unsalted Butter 
  • 200g Dark Chocolate
  • 100g Milk Chocolate
  • 130g Plain Flour
  • 4 Large Eggs
  • ½ tsp Salt
  • ½ Vanilla Pod
  • 350g Caster Sugar
  • 300g Chocolate Chips

Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4.
  2. Grease a deep baking tray with Butter and line with baking paper.
  3. To make the Chocolate Chip Cookies, mix the softened Butter with the Dark Brown and Caster Sugar until creamy and smooth.
  4. Halve the Vanilla Pod and add the scrapings to the butter mix and stir through.
  5. Sieve the flour into a large mixing bowl and add the Baking Powder and Salt.
  6. Add the Egg to the butter mix and add the Flour slowly, a few spoonfuls at a time, stirring well until the mix has combined and thickened.
  7. Stir in the Chocolate Chips.
  8. Spread the cookie mixture into the deep baking tray, and set aside.
  9. To make the Chocolate Brownies, break the Chocolate into small chunks and melt in a bowl with the Butter over  a pan of hot water (don’t allow the bowl and water to touch as this will burn the chocolate).
  10. In a separate large mixing bowl, beat the Eggs then add the Caster Sugar until thick and creamy, and add the scrapings of half a Vanilla Pod.
  11. Gently pour and fold in the melted chocolate, and then sift in the Flour mixed with the Salt, and mix well until fully combined.
  12. Pour the mixture into the tray on top of the cookie mixture. 
  13. Place the tray into the oven for 20-25 minutes (a skewer inserted should only have a little bit of mixture on it. Return to the oven for an extra 5-10 minutes to firm the mixture, if needed).
  14. Once cooked, remove from the oven and allow to cool in the tin.
  15. When they have cooled enough to touch, slice, eat and enjoy the Bronkies immediately!
