  • 100g butter
  • 100g caster sugar
  • 100g self-raising flour
  • ½ tsp vanilla extract
  • 2 eggs

Ingredients - Buttercream

  • 75g butter
  • 150g icing sugar
  • ½ tsp vanilla extract
  • 1tbsp milk
  • 200g milk chocolate
  • Smarties! (red if want Rudolph)
  • Packet of pretzels

Instructions

  1. Make the cake! Cream together butter and sugar. Then whisk in your eggs. Once combined, slowly fold in your flour and mix well.
  2. Whilst cooling it’s time to make the butter cream! Cream together your butter and sugar and add in your vanilla extract and milk if required to get a nice smooth consistency.
  3. Once your cake is cool crumble it into small crumbs and add your buttercream.
  4. Take sections of the cake mixture and roll it into balls and put on a lined tray.
  5. Push in a lolly stick and then pop into the fridge for a couple of hours to set.
  6. Once thoroughly chilled melt your chocolate into a bowl and take each of the cake pops and dip into chocolate allowing the excess to drip into a separate bowl.
  7. Then get creative! Add your smarties and pretzels and make up your Rudolph’s.
