Directions:
1. Mix all ingredients (except shredded coconut) in a food processor until it becomes a thick, sticky batter. Chopping or pre-grinding the cashews and soaking the dates in hot water for 5-10 minutes prior will help it to mix well.2. Pour dough into a large bowl and mix in shredded coconut until well combined.
3. Scoop about 1-2 tbsp of dough and roll into a ball with your hands. Place on a plate or in Tupperware in the fridge for an hour or freezer for 15 minutes to chill and firm.
