Directions:1. Mix all ingredients (except shredded coconut) in a food processor until it becomes a thick, sticky batter. Chopping or pre-grinding the cashews and soaking the dates in hot water for 5-10 minutes prior will help it to mix well.
2. Pour dough into a large bowl and mix in shredded coconut until well combined.
3. Scoop about 1-2 tbsp of dough and roll into a ball with your hands. Place on a plate or in Tupperware in the fridge for an hour or freezer for 15 minutes to chill and firm.
Try doubling the recipe -- balls will last for up to two weeks in the fridge or longer in the freezer. Grab whenever you need a quick pre/post workout boost or a healthy, tasty treat.
