Serves 8, 5 minutes preparation, 20 minutes cooking

Turkey and cranberry is a classic combination that is simply delicious on Christmas day and our simple Cranberry Sauce spiked with red wine is quick and easy to prepare and can be chilled for up to a week before consumption so it is a great recipe to prepare in advance. 

Ingredients

  • 500g fresh or frozen Cranberries
  • 100g Caster Sugar
  • 400ml Red Wine
  • 2 Cloves
  • 1 Cinnamon Stick

Method

  1. Bring the wine, sugar, cloves  and cinnamon slowly to a simmer in a large, shallow pan then cook until the liquid has reduced by half. 
  2. Next, add the cranberries to the pan and cook for 5-10 minutes until the cranberries burst and the mixture begins to look like jam. Remove the pan from the heat then set aside to cool. Top Tip: The sauce can be kept in the fridge for a week before use or even frozen for up to a month.
